Wagon-Wheel Pasta & Goat Cheese

This creamy wagon wheel pasta with goat’s cheese is a delightful vegetarian main that celebrates simple, high-quality ingredients. The whimsical shape of the pasta, known as rotelle, is perfect for catching the velvety sauce made from tangy goat's cheese and crème fraîche. Combined with the buttery texture of lima beans and the deep, savoury sweetness of caramelised onions, it offers a sophisticated twist on a comforting bowl of pasta.

Ideal for a quick midweek supper, this dish comes together in less than twenty minutes using mostly cupboard and freezer staples. The addition of fresh thyme provides a subtle earthy note that cuts through the richness of the cheese. Serve it in warmed bowls with a simple green salad on the side for a balanced and satisfying homemade meal that the whole family will enjoy.

Ingredients for Wagon-Wheel Pasta & Goat Cheese

  • 230g wagon-wheel (or any short) pasta

  • 1 275g box frozen lima beans

  • 1 tablespoon olive oil

  • 1 large onion, sliced thinly

  • 2 tablespoons crème fraîche (or soured cream)

  • 1 tablespoon finely chopped fresh thyme (optional)

  • 1/2 teaspoons kosher salt

  • 1/4 teaspoons freshly ground black pepper

  • 110g creamy aged goat cheese, cut into small chunks

How to make Wagon-Wheel Pasta & Goat Cheese

  1. Bring a large pot of salted water to a boil, then add the pasta.

  2. After 5 minutes, add the lima beans.

  3. Meanwhile, heat the olive oil in a skillet over medium heat. Add the onion and cook until browned, about 7 minutes.

  4. When the pasta is ready, drain it with the beans (reserving 120ml the liquid), then return the pasta and beans to the pot along with the onion, crème fraîche, thyme (if using), salt, pepper, goat cheese, and the reserved water. Toss together and serve.
