Tiny Corn Muffins

These bite-sized mini cornbread muffins are a delightful vegetarian treat, offering a perfect balance of subtle sweetness and savoury golden crust. Using buttermilk ensures a light, tender crumb, while the cornmeal provides that classic, slightly gritty texture that makes authentic cornbread so satisfying. They are wonderfully versatile, whether served warm with a drizzle of honey or used to mop up a spicy bean chilli.

Quick to prepare and even faster to bake, this recipe is an ideal choice for lunchboxes, tea-time snacks or as a crowd-pleasing side dish for a family barbecue. Because they are baked in a mini muffin tin, they are naturally portion-controlled and easy for children to enjoy. Serve them fresh from the oven for the best flavour and texture.
