This vibrant summer tomato and pepper soup is the ultimate chilled starter or light lunch for a warm afternoon. By combining juicy tomatoes with the smoky depth of jarred roasted peppers, this vegetarian dish achieves a complex flavour profile without any time spent over a hot hob. The addition of white horseradish and a dash of hot sauce provides a subtle, sophisticated heat that perfectly balances the sweetness of the vegetables.
Designed to be made ahead, this cooling soup is ideal for stress-free entertaining or a healthy weekday meal. Serving it with a rounds of creamy soft goat's cheese and aromatic fresh basil adds a luxurious touch, while a final drizzle of extra-virgin olive oil brings the Mediterranean inspired flavours together. Pair it with crusty sourdough bread for a satisfying, nutrient-rich seasonal treat.
