Moroccan Carrot Soup

This vibrant Moroccan carrot soup is a beautifully balanced vegetarian dish that combines earthy sweetness with aromatic spices. The natural flavour of the carrots is enhanced by a touch of honey and a hint of allspice, resulting in a velvety texture that feels truly indulgent. By toasting and grinding your own cumin seeds, you provide a depth of fragrance that elevates this simple lunch into something much more sophisticated.

Ideal for a light weekday meal or a comforting starter for a dinner party, this soup is both healthy and filling. The cooling drizzle of plain yogurt offers a fresh contrast to the warm spices, making it a wonderful year-round recipe. Serve it with toasted flatbreads or a crusty sourdough loaf to soak up every drop of the spiced broth.
