Grilled Ratatouille Salad with Feta Cheese

This grilled ratatouille salad is a vibrant, smoky twist on the classic Provençal vegetable stew. By charring the aubergine, courgette and peppers on a hot grill or barbecue, you intensify their natural sweetness while adding a delicious depth of flavour. The use of shop-bought garlic oil provides a quick shortcut to a punchy dressing, making this an ideal choice for a light late-summer lunch or a sophisticated side dish for outdoor dining.

As a versatile vegetarian dish, this recipe is packed with Mediterranean vegetables and finished with a scattering of salty feta and fresh basil. It is naturally low in carbohydrates and high in fibre, offering a healthy yet comforting meal that can be prepared in under twenty minutes. Serve it warm alongside some crusty sourdough bread to soak up the balsamic glaze and juices.
