This elegant eggy grits soufflé is a sophisticated take on a comforting classic, offering a beautiful golden crust and a light, cloud-like interior. By combining stoneground grits with sharp Parmesan and a hint of Tabasco for warmth, this vegetarian dish balances savoury depth with a delicate texture. It is a wonderful way to introduce more variety to your repertoire, serving as an impressive centrepiece for a weekend brunch or a refined light lunch when paired with a crisp green salad.
Ideal for those seeking a gluten-free alternative to traditional savouries, this recipe relies on properly whisked egg whites to achieve its signature lift. The addition of stoneground grits provides a unique, rustic heartiness that sets it apart from a standard cheese soufflé. It is best enjoyed the moment it leaves the oven, ensuring your guests experience the full dramatic effect of the rise and the enticing aroma of toasted cheese.

4 large eggs, separated
30g freshly grated Parmesan cheese
2 dashes of Tabasco sauce

How to make Eggy Grits Soufflé
Preheat the oven to 218°C. Lightly butter a 4-cup souffl´ dish.
Combine 350ml water and the milk in a heavy saucepan and warm the mixture over medium-low heat. Slowly stir or whisk in the grits until smooth and thickened, about 15 minutes. Remove from heat.
Lightly beat the egg yolks in a bowl. Gradually stir some of the hot grits into the yolks to temper them. Then stir the tempered egg yolks into the grits. Set aside to cool slightly.
Stir the Parmesan cheese, Tabasco sauce, salt, and pepper into the grits.
Place egg whites in a bowl, add a pinch of salt, and beat with an electric mixer until the whites are stiff but not dry. Using a rubber spatula, fold the whites into the grits until just combined.
