This aromatic curried red lentil and Swiss chard stew is a vibrant, plant-based dish that brings warmth and comfort to the table. The combination of earthy lentils and protein-rich chickpeas makes for a substantial meal, while the Swiss chard adds a lovely pop of colour and a hit of nutrients. With its mild heat and fragrant spices, it is a fantastic way to enjoy seasonal greens in a savoury, one-pot format.
As a versatile vegetarian main, this stew is perfect for busy weeknights when you need something wholesome yet quick to prepare. The addition of plain yogurt provides a cooling contrast to the curry spices, creating a well-balanced bowl of goodness.
