This vibrant cranberry crunch salad is a sophisticated vegetarian dish that balances sweet, tangy and earthy flavours. Combining the peppery crunch of red cabbage with tart green apples and chewy dried cranberries, each bite offers a wonderful contrast of textures. The toasted pecans and celery seeds provide a subtle warmth that elevates the fresh produce, making it an ideal choice for a light lunch or an elegant dinner party appetiser.
Served in delicate endive leaves, this recipe is as visually striking as it is delicious. The creamy dressing, made with a blend of Greek yogurt and lemon, keeps the salad refreshing and healthy without the need for heavy oils. It is a fantastic way to enjoy seasonal produce, offering a nutritious boost of antioxidants and fibre in a beautifully presented format.
