This classic homemade coleslaw is a versatile vegetarian side dish that brings a fresh, crunchy texture to any meal. By combining finely shredded green cabbage with sweet carrots and crisp peppers, this recipe creates a vibrant base that far surpasses shop-bought versions. The light, tangy dressing uses cider vinegar and a touch of sugar to balance the creamy mayonnaise, ensuring every bite is perfectly seasoned.
Perfect for summer garden parties, this colourful salad is an essential accompaniment to grilled halloumi, veggie burgers or a simple jacket potato. Preparing it at least an hour in advance allows the vegetables to wilt slightly and the savoury flavours to meld together beautifully. It is a reliable, crowd-pleasing staple that adds a healthy, homemade touch to your table.
