This savoury chickpea pizza, inspired by the traditional Mediterranean farinata or socca, is a brilliant vegetarian option for those seeking a gluten-free alternative to dough. Made with earthy chickpea flour and scented with fresh rosemary, this dish offers a unique texture that is crisp on the outside and tender in the middle. The addition of sharp Parmesan cheese creates a golden, lacy crust under the grill, providing a satisfyingly salty finish that pairs beautifully with the nutty base.
Quick to prepare and incredibly versatile, this recipe works perfectly as a light lunch served alongside a crisp green salad or sliced into wedges for a sophisticated snack. Because the batter relies on simple store-cupboard staples, it is an excellent choice for a nutritious midweek meal. For the best results, ensure your frying pan is thoroughly heated before adding the batter to achieve that signature scorched, authentic flavour.
