Succotash of Fresh Corn, Lima Beans, Tomatoes and Onions

This vibrant vegan succotash is a celebration of seasonal produce, combining the natural sweetness of fresh corn with succulent lima beans and juicy vine-ripened tomatoes. Unlike heavier versions that use cream or butter, this recipe relies on high-quality extra-virgin olive oil and the natural juices from the slowly simmered tomatoes to create a light, savoury sauce. It is a wonderfully colourful dish that works beautifully as a standalone lunch or a nutritious side for a summer gathering.

Packed with plant-based protein and fibre, this versatile vegetable medley is both comforting and healthy. Using a mix of white and yellow corn adds a lovely visual contrast, while the addition of fresh basil provides a peppery finish. It is an excellent make-ahead option for busy weekdays, as the flavours develop and deepen when left to sit.
