Ingredients for Silken tofu with soy-sauced tomatoes

  • 240 ml cherry tomatoes, halved

  • 15 ml soy sauce

  • 5 ml olive oil

  • freshly ground black pepper

  • 340 g silken tofu, chilled

  • toasted sesame oil

  • 1–2 spring onions, thinly sliced (optional)

  • a handful basil, thinly sliced (optional)

How to make Silken tofu with soy-sauced tomatoes

  1. In a small saucepan, combine the tomatoes, soy sauce, olive oil, and several grinds of black pepper. Place over low heat and cook for 5–7 minutes, until the tomatoes begin to soften and juices accumulate in the pan.

  2. Carefully cut the tofu into 2 wide slabs (or 4 smaller ones) and arrange them on plates or in shallow bowls.

  3. Divide the warm tomato mixture evenly over the tofu.

  4. Drizzle with toasted sesame oil, then sprinkle with scallions and basil, if using.

  5. Serve immediately.
