Sautéed Green Beans and Brussels Sprouts with Chilli and Mint

This vibrant sautéed green beans and Brussels sprouts dish offers a refreshing twist on classic winter greens. By combining thinly sliced sprouts with crisp beans, you create a wonderful contrast in textures that is elevated by a gentle heat from the red pepper flakes and the cooling, aromatic note of dried mint. It is a sophisticated yet simple way to serve seasonal vegetables, bringing a bright burst of colour and flavour to your dinner table.

As a versatile vegan side dish, these greens pair beautifully with a traditional nut roast or a simple grilled main. The method of quick sautéing followed by a brief steam ensures the vegetables retain their nutritional value and a pleasing crunch. This recipe is an excellent choice for those seeking a healthy, gluten-free accompaniment that feels far more special than standard boiled greens.
