This vibrant raspberry vinegar is a simple yet sophisticated way to preserve the fleeting flavour of summer berries. By infusing high-quality red wine vinegar with fresh raspberries, you create a bright, ruby-red condiment that balances sweetness with a sharp acidity. It is an essential store-cupboard staple for anyone who enjoys making their own dressings or deglazing a pan to create a quick, fruit-forward sauce.
As a versatile vegan ingredient, this homemade infusion makes a thoughtful gift for food-loving friends or a refreshing addition to your own kitchen. Drizzle it over a spinach and goats' cheese salad, use it to macerate shallots, or even add a splash to sparkling water for a sophisticated, low-sugar shrub. With just a week of patience, you will have a condiment that far surpasses shop-bought alternatives.

Ingredients for Raspberry Vinegar
575ml ripe raspberries
240ml (about) good-quality red wine vinegar
How to make Raspberry Vinegar
Fill a clean pint jar with whole raspberries, pressing down slightly to fit in jar snugly. Add enough vinegar to cover raspberries. Cover mixture and let macerate at room temperature for 1 week.
Set a strainer over a medium bowl; line with a double layer of cheesecloth. Pour vinegar mixture through strainer. Gather corners of cheesecloth and twist to release juices just until thicker juices begin to strain from cheesecloth. Discard cheesecloth with solids. Pour vinegar into a clean 230g bottle or jar. Cover; chill up to 6 months.
