This vibrant jerk marinade is a versatile staple for anyone looking to bring the bold, punchy flavours of Caribbean cooking into their kitchen. Infused with the heat of scotch bonnet chillies and the aromatic warmth of allspice and fresh thyme, it provides a perfect balance of spicy, sour, and sweet notes. The addition of fresh lime juice and ginger ensures every bite is bright and zingy, making it a fantastic way to elevate simple ingredients.
As a naturally vegan recipe, this marinade is incredibly adaptable and works beautifully with everything from firm tofu and cauliflower steaks to traditional grilled meats. It is an ideal choice for summer barbecues or a comforting weekend dinner. By reserving a portion of the mixture to use as a finishing sauce, you can ensure a double hit of fragrance that complements the smoky charred notes from the grill.
