This roasted Indian aubergine and onion dip is a fragrant, vegan-friendly starter that brings deep, smoky flavours to the table. Inspired by traditional bharta, the aubergine is roasted until tender and blended with caramelised onions and warm garam masala. Using fresh mint and coriander adds a vibrant lift, making it a sophisticated alternative to standard shop-bought dips for your next gathering.
A light and healthy snack, this recipe is perfect for sharing as part of a plant-based platter or a relaxed weekend lunch. The homemade pitta crisps provide a satisfying crunch that complements the velvety texture of the vegetable purée. For the best results, serve the dip slightly warm or at room temperature to allow the aromatic spices to shine through.

Preheat oven to 246°C. Arrange pita wedges in single layer on rimmed baking sheet; brush pita lightly with 1 tablespoon olive oil.
