Ingredients for Ginger Carrot Dip with Crudites
120ml mayonnaise
1 1/2 tablespoons seasoned rice vinegar
1 tablespoon soy sauce
1/4 teaspoons Asian sesame oil
5 medium carrots, coarsely chopped
40g chopped peeled ginger
2 spring onions, coarsely chopped
Accompaniments: raw carrot, celery, and cucumber sticks
trimmed green beans and asparagus
broccoli and cauliflower florets

How to make Ginger Carrot Dip with Crudites
Purée all ingredients in a blender until almost smooth, about 2 minutes. Transfer to a bowl and chill, covered, at least 1 hour.
