Chimichurri Marinade

This vibrant chimichurri marinade is a versatile staple that brings a bright, herbaceous lift to any grilled dish. Taking inspiration from Argentinian flavours, this vegan-friendly blend combines fresh flat-leaf parsley, coriander, and oregano with the sharp tang of red wine vinegar and a subtle heat from red chillies. It is an excellent way to add punchy, savoury notes to your cooking while keeping the preparation simple and fresh.

Designed as both a marinade and a finishing sauce, this recipe works beautifully with roasted cauliflower steaks, grilled Portobello mushrooms, or traditional protein options. By allowing the herbs to macerate in the vinegar and aromatics first, you create a deeper flavour profile that penetrates through the food. It is a fantastic choice for summer barbecues or a healthy midweek meal that requires minimal effort for maximum impact.
