This vibrant carrot, coriander and chilli slaw is a refreshing alternative to traditional mayonnaise-based salads. Using a rainbow of assorted carrots adds a beautiful visual appeal to the table, while the combination of zesty lime and heat from the jalapeños creates a bright, punchy flavour profile. It is a wonderful way to celebrate seasonal produce with minimal effort, providing a crisp texture that holds up well alongside richer dishes.
As a versatile vegan side dish, this slaw is particularly well-suited for summer dining, pairing perfectly with grilled proteins or tucked into smoky black bean tacos. Ground coriander adds an earthy depth that complements the fresh herbs, making it a healthy and aromatic addition to any plant-based menu. Simply toss it together and let the flavours meld for a quick, nutritious accompaniment.
