This aromatic caramelised onion, rosemary and pine nut topping is a versatile addition to any plant-based repertoire. By slowly cooking the onions until they reach a rich, golden hue, you draw out their natural sweetness, which provides a beautiful contrast to the earthy fragrance of fresh rosemary. The addition of toasted pine nuts at the final stage introduces a sophisticated buttery crunch that elevates the overall texture.
As a delicious vegan condiment, this topping is remarkably flexible for various dining occasions. It works exceptionally well scattered over a homemade focaccia, stirred into a savoury tart filling, or served alongside roasted root vegetables. Prepared in advance, it develops even deeper flavours, making it a practical choice for stress-free entertaining or simple midweek meal upgrades.
