This vibrant vegan side dish celebrates the height of summer produce with a simple, high-heat cooking method. By grilling baby courgettes and pattypan squash until their skins are blistered and lightly charred, you unlock a natural sweetness and smoky depth of flavour. The juicy, grilled tomatoes provide a soft, acidic contrast, making this a colourful and sophisticated addition to any seasonal spread.
Ideal for outdoor dining, these charred vegetables are as nutritious as they are visually striking. The combination of textures and the ease of preparation make this recipe an excellent choice for a healthy barbecue accompaniment or a light lunch. Serve them on a large platter with a drizzle of extra virgin olive oil or a scattering of fresh herbs for a simple yet impressive finish.
