Ingredients for Chicken zucchini burgers

  • 240 g plain Greek yogurt

  • 10 ml lemon zest

  • 30 ml fresh lemon juice

  • 2 garlic cloves, minced

  • 15 ml extra-virgin olive oil

  • 3 g sea salt

  • 450 g minced chicken or turkey breast

  • 1 medium courgette, shredded, excess water squeezed out with a clean kitchen towel or cheesecloth

  • 75 g corn kernels

  • 75 g red pepper, cored, deseeded, and finely chopped

  • 3 spring onions (white and green parts), thinly sliced

  • 1 large egg, lightly beaten

  • 75 g wholemeal panko bread crumbs or almond flour

  • 30 g chopped fresh coriander

  • 3 garlic cloves, finely chopped

  • 5 g ground cumin

  • 5 g kosher salt

  • 3 g freshly ground black pepper

  • 30 ml avocado oil

  • 2 whole grain pitas, halved into pockets

  • 60 ml hummus, homemade or store-bought

  • Romaine lettuce or spinach (optional)

  • Chopped cucumber (optional)

  • Sliced tomatoes (optional)

How to make Chicken zucchini burgers

  1. Mix all the ingredients for the Greek yogurt sauce in a small bowl. Place in the fridge until ready to serve.

  2. Preheat the oven to 220°C (conventional).

  3. In a large bowl, combine all the burger ingredients except the oil. Use your hands to mix well and form four patties.

  4. Heat the oil in a large ovenproof frying pan over medium heat, swirling to coat the bottom of the pan. Add the patties and sear for about 2 minutes on each side until golden brown.

  5. Carefully transfer the frying pan to the oven and bake for 7–10 minutes, until cooked through.

  6. While the burgers are baking, smear approximately 1 tablespoon of hummus inside each pita pocket. Stuff with the vegetables and top with the cooked burgers.

  7. Drizzle the Greek yogurt sauce inside the pita pockets or serve it as a dip alongside.
