This chicken and cucumber salad with yoghurt dressing is a masterclass in clean, bright flavours. Combining tender poached chicken breast with the crisp crunch of Lebanese cucumbers and celery, it is an exceptionally refreshing dish. The addition of flat-leaf parsley, dill and mint provides a fragrant, herbaceous base that perfectly avoids the heaviness of more traditional creamy salads.
As a high-protein, low-carbohydrate meal, this salad is ideal for a light midweek dinner or a sophisticated packed lunch. The star of the dish is the silky dressing, which uses salty feta and tart lemon juice to create a vibrant alternative to mayonnaise. Enjoy it immediately while the vegetables are at their crispest for a truly healthy and satisfying eating experience.
