This Mediterranean-inspired swordfish with olive, pinenut, and parsley relish is a fantastic option for a nutritious mid-week meal. The meaty texture of the swordfish steaks pairs beautifully with the salty punch of brine-cured green olives and the buttery crunch of toasted pine nuts. It is a vibrant, fresh dish that brings together classic coastal flavours with very little effort, making it ideal for those seeking a sophisticated dinner that can be prepared in under twenty minutes.
As a heart-healthy choice, this recipe uses extra-virgin olive oil and lean protein to create a satisfying and balanced plate. The piquant relish, brightened with a splash of dry white wine and plenty of fresh parsley, ensures the fish remains moist and flavourful. Serve it alongside some steamed seasonal greens or a crisp salad for a light, wholesome supper that feels truly decadent.
