This elegant Steak Diane offers a sophisticated dinner that feels indulgent yet remains mindful of health. By using a clever base of blended black-bean soup, this recipe recreates the classic, velvety texture of the traditional sauce without the need for heavy cream. The combination of Madeira, Dijon mustard, and Worcestershire sauce ensures a deep, savoury flavour profile that perfectly complements the seared flatiron steaks.
Designed as a diabetes-friendly main course, this dish is rich in protein and provides a satisfying meal that is quick enough for a weeknight treat but polished enough for entertaining. For a complete and balanced dinner, serve the steaks alongside a portion of steamed green beans or a crisp garden salad to add a fresh, vibrant contrast to the robust sauce.

Ingredients for Steak Diane
2 tablespoons unsalted butter
1 tablespoon vegetable oil
4 (3/4-inch-thick) flatiron steaks (about 170g each)
1 (16- to 550g ) can black-bean soup
4 spring onions, chopped (240ml )
120ml water
2 tablespoons Worcestershire sauce
2 tablespoons Madeira
1 tablespoon Dijon mustard
2 tablespoons chopped flat-leaf parsley
How to make Steak Diane
Heat butter and oil in a 12-inch heavy skillet over medium heat until foam subsides. Meanwhile, pat steaks dry and sprinkle both sides with 3/4 teaspoons salt and 1/2 teaspoons pepper (total). Cook steaks, turning once, until browned and medium-rare, 6 to 8 minutes total.
While steaks cook, stir soup in can, then transfer 160ml to a blender (reserve remainder for another use) and blend until very smooth, about 2 minutes.
Transfer steaks to a cutting board and let stand, loosely covered, 10 minutes. Meanwhile, pour off all but 1 tablespoon fat from skillet and cook spring onions over medium heat, stirring, until softened. Stir in blended soup along with remaining ingredients and any juices from meat and bring to a boil. Spoon some of sauce over steaks and serve remainder on the side.
