Rosemary and Mustard Breakfast Sausages

These homemade rosemary and mustard breakfast sausages offer a sophisticated twist on a morning favourite. By using fresh herbs and sharp whole grain mustard, you can create a savoury, aromatic patty that is far superior to standard shop-bought versions. The combination of sweet, caramelised onions and woody rosemary provides a deep flavour profile that pairs perfectly with eggs or grilled tomatoes for a nutritious start to the day.

As a diabetes-friendly option, these patties are high in protein and focus on wholesome ingredients rather than sugary fillers. They are incredibly practical for busy mornings, as the mixture can be prepared and shaped a day in advance. Simply bake them in a hot oven for a quick, lean, and satisfying breakfast that the whole family will enjoy.

Ingredients for Rosemary and Mustard Breakfast Sausages

  • 1 tablespoon olive oil

  • 1 medium onion, finely chopped

  • 1 teaspoon chopped fresh rosemary

  • 1 400g package breakfast sausages, casings removed

  • 2 teaspoons whole grain mustard

  • Fresh rosemary sprigs

How to make Rosemary and Mustard Breakfast Sausages

Heat oil in small skillet over medium-high heat. Add onion and chopped rosemary; sauté until golden, about 10 minutes. Transfer to medium bowl. Add sausage, mustard, and generous amount of freshly ground black pepper. Mix gently. Form into twelve 2-inch-diameter patties. Arrange sausages on heavy baking sheet. (Can be made 1 day ahead; chill.)

Set rack at lowest position in oven and preheat to 260°C. Bake sausages until just cooked through, about 6 minutes. (If sausages have not browned, grill 2 minutes.) Transfer sausages to paper towels to drain, then arrange on platter. Garnish with rosemary sprigs and serve.
