These mini beef and mushroom patties are a savoury delight, blending lean minced beef with earthy mushrooms for a lighter, more succulent texture. Using mushrooms not only adds a wonderful depth of flavour but also helps to increase the vegetable content while keeping the patties moist during cooking. They are a fantastic option for a satisfying lunch or a protein-rich snack that doesn't feel heavy, making them a versatile addition to your weekly meal prep.
Crafted to be a diabetes-friendly choice, this recipe focuses on high-quality protein and hidden vegetables rather than processed fillers. The soy sauce provides a rich umami finish without the need for excessive salt. Serve these versatile patties alongside a fresh seasonal salad or some roasted courgettes for a balanced, low-carb dinner that the whole family will enjoy. They also freeze exceptionally well for a quick and healthy homemade meal on busy weeknights.

Pulse mushrooms in food processor until very finely chopped. Transfer to paper towels and squeeze dry, then transfer to bowl with onions. (Alternatively, you can finely chop vegetables by hand.)
Add beef, soy sauce, salt, and pepper to bowl with onions and mushrooms. Mix well with your hands, then divide into 3-Tbsp.-sized portions and form into patties about 2 1/2" in diameter and 1/2" thick. You should have about 26 patties. Divide between baking sheets.
Bake patties 3 minutes, then flip and bake until cooked to desired doneness, 3–4 minutes more for medium/medium-well.
Patties can be cooked 3 days ahead; wrap in plastic and chill, or freeze up to 6 months.
