Grilled Chicken and Prawns Kebabs with Lemon and Garlic

These lemon and garlic chicken and prawn kebabs offer a fresh and vibrant option for summer dining. By marinating lean chicken mini fillets and succulent prawns in a zesty blend of citrus and garlic, you create a dish that is deeply savoury without the need for heavy sauces. The combination of seafood and poultry provides a satisfying protein hit that feels light and sophisticated, especially when served over a crisp bed of seasonal baby leaves.

As a diabetes-friendly main course, this recipe prioritises heart-healthy fats from olive oil and remains naturally low in carbohydrates. It is an excellent choice for a quick midweek meal or an impressive addition to a weekend barbecue. For the best results, use sustainable, large prawns and serve with a fresh avocado salsa to add a creamy texture that complements the charred, smoky flavour of the grill.
