Cauliflower Soup with Pecorino Romano and Truffle Oil

This elegant cauliflower soup with Pecorino Romano and truffle oil offers a sophisticated twist on a classic vegetable dish. The base is built with smoky bacon and softened aromatics, which provide a deep, savoury foundation for the mild cauliflower. By simmering the vegetables with a rind of Pecorino, the broth develops a complex, nutty saltiness that elevates the soup into something truly special for a dinner party starter or a weekend treat.

As a diabetes-friendly recipe, this soup focuses on nutrient-dense vegetables and high-quality fats to provide plenty of flavour without the need for starchy thickeners. The addition of a small amount of double cream and a drizzle of truffle oil adds a touch of luxury while keeping the dish nourishing. For the best results, use a high-speed blender to achieve a perfectly velvet-smooth texture before serving with extra cheese shavings.
